Chocolate-Coconut Cupcakes + Cream-Cheese Frosting

Ingredients
Cake -
- 1 3/4 cups flour
- 2 cups sugar
- 3/4 cup cocoa powder
- 1 1/2 tsp baking soda, baking powder, and salt (each)
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp orange blossom water
- 1 cup boiling water
Frosting -
- 8oz cream cheese
- 1/2 cup butter at room temperature
- 4 1/2 - 5 cups powdered sugar
- 1 tsp orange blossom water
- 1 cup + coconut flakes (sweetened)
Preheat oven to 350F and place cupcake cups in 2 12-cupcake trays. Sift all dry ingredients (flour, sugar, cocoa powder, baking soda/powder, salt) in a large mixing bowl. Stir in eggs and then add milk, vegetable oil, and orange blossom water. Next, stir in boiling water. Then, taste the batter just incase ;). Add about 1/4 cups of batter to each cupcake cup. bake for 20-25 minutes. let the cupcakes cool.
To make the frosting, beat the cream cheese and butter until combined and fluffy. Next, add the orange blossom water and slowly add the powdered sugar. Place the frosting in a plastic bag, cut a small piece of the corner, and pipe onto cupcakes. Spread the frosting on top of the cupcakes and roll the cupcakes into the coconut flakes.

Oh man, these look so good. I'm such a fan of cream cheese frosting. I bet the orange water adds a really great flavor!
